Crusted Beef Filet, Steamed Brocolli, Roast Garlic Sweet Potatoes, Delicious!

Posted On: August 28, 2008

I normally write about encouraging or motivating you all on your road to health but I thought that a nice meal idea that's yummy and good for your waistline would be a welcome change!

(2 servings) 2 x 3oz beef filets 8oz broccoli 2 medium sweet potatoes 1 tbsp rosemary - chopped 1 garlic clove - minced

Spices

1 tbsp ground cumin 1 tbsp ground coriander 1 tsp ground cloves 1 tsp ground cinnamon 1 tsp ground nutmeg 1 tbsp paprika 1 tsp ground tumeric 1 tsp ground ginger 1 Tablespoon brown sugar 2 Tablespoon salt 2 Tablespoon ground black pepper

To make the spice, simply grind all the ingredients together then ‘toast’ in a pan till the fragrance is released, keep eye on it so it won’t burn.Alternatively

Pre-heat oven to 375 degrees. Cut sweet potatoes into quarters and toss with olive oil, rosemary and garlic. Roast approximately 15 minutes or until tender.

Coat the beef filets with your chosen spice mix and sear in a hot oiled pan. Cook to desired temperature (medium rare, 8-10 minutes; medium, 10-12 minutes; well done, 12-15 minutes). When ready, serve with portion of potatoes and cooked broccoli. Quick, easy and nutritious

Keep going on your road to a better you!
